CAVOLFIORE FRITTO IN PASTELLA
(Vrocculi cca' pastetta)
 

Ingredients:
1Kg. of Cauliflower - 150gr. Flour - 2 Eggs - 1 Anchovy fillet - Salt - Pepper - Oil.

Preparation:
Boil the cauliflower in salted water. Drain it al dente and cut it into pieces. Prepare the batter by placing the beaten eggs in a bowl with a fork, pour the flour into a rain, so that it does not form lumps and continue to mix vigorously always in the same direction. Add the anchovy cut into small pieces, salt and pepper. Pass the cauliflower into the batter and fry in a pan with the hot oil.
