GIRELLO ALLA PALERMITANA
(Aglassato alla Palermitana)
 

Ingredients:
1Kg. of Lacerto or Girello di Veal - 500gr. of white onions - 1/4 L of dry white wine - 2 glasses of oil - 1 tablespoon of tomato concentrate - bay leaf - rosemary - salt - pepper.

Preparation:
Slice the very thin onions, fry them in a glass of oil, until they are well cooked. In a pan, brown the meat with the smells and the remaining oil. Add the already cooked onions to the meat and sprinkle with the wine. Salt and pepper. Cook in a hot oven for about 90 minutes. When the meat is already cooked, pass the cooking base over the vegetables and pour the tomato paste. Serve the meat cut into thin slices and cover with onions.
