PASTA CON IL CAVOLFIORE
(Pasta cchi' vrocculi arriminati)
 

Ingredients:
500gr. of Bucatini - 1Kg. of Cauliflower - 100gr. of Caciocavallo or Pecorino or grated Parmigiano - 25gr. of Pinoli - 50gr. of raisins - 4-5 anchovy fillets - saffron - 1 onion - salt - pepper - oil.

Preparation:

Boil the cauliflower in salted water. Drain it while keeping the cooking water. In a pan put the anchovies, the oil and the minced onion. Brown the anchovies together with the wooden spoon, add the raisins, the pine nuts and the tops of the boiled cauliflower. Cook for about 10 minutes, grinding the cauliflower with a fork to mix the flavors. In the cauliflower cooking water, cook the pasta al dente. Just before extinguishing the fire, saffron melt in the water. Put the pasta in the pan with the cauliflower, season with grated cheese.
