PASTA CON MACCO DI FAVE SECCHE

Ingredients:

250gr. of dried Dead Beans - 1 Red onion - 300gr. of blanched and peeled ripe tomatoes - 200gr. of chopped spaghetti - 1 tablespoon of olive oil - Caciocavallo or grated Pecorino cheese.

Preparation:

Soak the beans for one night. In a clay pot, containing one liter of salted water, put the sliced onion thinly and the tomatoes without diced seeds. Add the beans and cook in covered pot and slow fire for about 2 hours. Remove the pot from the heat and with a wooden spoon, fry the beans until a thick cream is obtained. Separately cook the pasta and add it to the previously prepared puree. Season with oil, ground pepper and grated cheese.
