POLPETTE DI ALICI

Ingredients:
1Kg. of fresh anchovies - 3 boiled potatoes - 3 tablespoons of Caciocavallo or grated Parmesan - 25gr. of raisins - 25gr. of Pine nuts - 2 Lemons - Parsley - 1 Egg - 1 tablespoon breadcrumbs - 1 clove of chopped garlic - flour - salt - pepper - oil.

Preparation:

Clean the fish, wash them, drain them well and chop them with a knife. Knead the fish in a bowl with the egg, breadcrumbs, cheese, raisins and pine nuts; add the chopped garlic and parsley, the crushed potatoes, salt and pepper. Form some meatballs, flour them and fry them in plenty of oil. Serve hot with the lemon squeezed.
