INSALATA CON POLPO BOLLITO
(Purpu vugghiutu)
 

Ingredients:
1Kg. of octopus - lemon juice - oil - salt.

Preparation:
Boil the octopus in salted water. When it is cooked, cut into small pieces and season with oil, salt and lemon. To taste, add olives, onion and parsley.
Because the octopus is cooked and soft, put a cork in the cooking water. The effect of cork on the octopus is not scientifically explainable, but it works.
