TRIPPA CON MELANZANE

Ingredients:
1Kg. of tripe already boiled - 500gr. Peeled tomatoes - 3 Aubergines - 4 tablespoons Pecorino or grated Parmesan - 1 clove of Garlic - Basil - Spicy dried chili - Salt - Oil.

Preparation:
Prepare the tomato sauce with peeled tomatoes and garlic, chilli pepper, oil, salt and basil. In a pan place a layer of tripe, a layer of aubergines previously cut into slices and fried, sprinkle with the sauce and sprinkle with grated cheese. Continue to overlap the layers until the ingredients run out. Complete with sauce and cheese. Bake in a hot oven for 30 minutes.
